Capsicum red pigment, also known as paprika oleoresin, is a natural colorant extracted from chili peppers. Its main coloring components are capsanthin and capsanthin, both of which are carotenoids and account for 50%–60% of the total pigment. In addition, capsicum red pigment also contains a certain amount of non-coloring component capsaicin.
The most important components of capsicum red pigment are capsanthin and capsanthin, which give it its vibrant red color. It also contains other carotenoids such as γ-carotene, lutein, zeaxanthin, cryptoxanthin, as well as vitamin E, vitamin C, and protein.

Widely used in ice cream, biscuits (surface coloring), artificial crab meat, cooked meat products, sauces (such as hot pot base and chili sauce), candy, canned goods, salad dressings, dairy products, and beverages. Add as needed for production; it is particularly effective in coloring oily foods (such as margarine).
Used as a natural red pigment in lipsticks, blushes, and other cosmetics (due to its insolubility in water and strong oil solubility, it can produce a rich range of colors). It is also used for coloring skincare products.
Added to poultry feed and aquatic (such as salmon and shrimp) feed, it deposits in egg yolks, skin, or muscle to improve product color (such as enhancing the orange-red hue of egg yolks and the redness of shrimp shells). It is a nutritional coloring agent.
Used as a red coloring agent for pharmaceutical coatings or capsules (especially suitable for children’s preparations). Some studies suggest that its carotenoid components have antioxidant and anti-radiation potential, but coloring remains its primary function.

5. What is the core difference between capsaicin and synthetic red pigments (such as Allura Red and Carmine)?
A: Capsaicin is a natural carotenoid pigment extracted from red chili peppers. It is natural, biodegradable, and highly safe. Some countries/regions prioritize the use of natural pigments in infant formula and organic products. While synthetic pigments offer more stable color and lower cost, some markets (such as the EU and Japan) have strict limits on their addition and do not conform to the “clean label” trend.
6. How heat-resistant and light-stable is capsaicin? What processing techniques is it suitable for?
A: Capsaicin is relatively heat-stable (it can withstand short-term processing below 120°C, such as pasteurization and baking), but it is sensitive to light and oxygen. Prolonged exposure to light will cause fading. It is recommended for use in products packaged in a light-proof or oxygen-barrier manner, such as candies, sauces, seasonings, and surface coloring of meat products. It is not recommended for use in transparent bottled beverages or foods displayed outdoors for extended periods.
7. Is capsaicin powder soluble in water? How can it be dispersed in different systems?
A: Natural capsanthin is oil-soluble and insoluble in water. Powder form usually needs to be pre-dispersed in vegetable oil or an emulsion system. If a water-dispersible form is required, emulsified capsanthin powder or water-soluble capsanthin liquid can be purchased. It can be added directly to oil-based products (such as oils, chocolate, and fillings); in water-based products, it needs to be mixed with a small amount of oil and thoroughly homogenized.
8. Does capsanthin have any off-odor or genetically modified risk?
A: High-quality capsanthin powder has almost no chili odor, but lower-quality products may have a slight fermented smell. There is no genetically modified risk because the raw material is natural chili peppers, a non-GMO crop.
