Product Description
D-Tagatose is a rare, naturally occurring low-calorie monosaccharide (sugar) that serves as a functional sweetener. It is 92% as sweet as sucrose (table sugar) but has only about 1.5 kcal/g—roughly 60% fewer calories than sugar. Often produced from lactose, it is popular in low-calorie foods due to its similar taste and texture to sucrose.
While found in small amounts in dairy products, fruits, and cacao, D-tagatose is commercially produced via the hydrolysis of lactose into glucose and galactose, followed by the isomerization of galactose. It is a stereoisomer (epimer) of D-fructose.
