Product Description

What Is Matcha Powder?

Matcha powder is a finely ground powder made from specially grown and processed green tea leaves that have been certified as organic. This means the tea plants are cultivated without synthetic pesticides, herbicides, or fertilizers, and the processing methods adhere to strict organic standards.

Matcha is a type of green tea, made from the powdered leaves of the Camellia sinensis plant. Originally served at tea ceremonies in Japan, so-called matcha tea is now widely available and used in the food industry and in cooking.Matcha is packed with phytonutrients that bring a host of health benefits such as combating free radicals, weight loss promotion and immune system support.

Although from the same plant as green tea, matcha is grown differently and as a result has a unique nutrient profile. The plants are covered with bamboo mats during most of the growing period, which increases the amount of chlorophyll in the leaves for its characteristic bright green colour.Matcha is made from the youngest tea leaves in which the vital energy is stored. A few weeks before the harvest, the tea bushes are covered to prevent direct sunlight – which helps them to protect valuable properties.

Matcha powder is rich in antioxidants (especially EGCG) as well as other beneficial compounds such as L-theanine, which have been linked to a variety of health benefits. These ingredients help improve brain health, heart health, and may help prevent cancer, while also aiding in weight management and stress reduction.

What is ceremonial grade matcha?

Ceremonial Grade Matcha is a premium-quality green tea powder from the finest Japanese tea leaves. To produce this exquisite matcha, the leaves are carefully ground between large stones until they become powder. Only 30 grams of Matcha per hour are produced, about how much Matcha goes into a Ceremonial Grade Matcha tin. This meticulous method ensures a smooth, vibrant powder with a rich emerald color when whisked.

While not regulated by any governing body or reflected in an authentic Japanese grading system, most people understand the term ‘ceremonial grade matcha’ to be a marker of quality.

Matcha labelled as ceremonial grade is usually a high-quality tea made from young, first-harvest tea leaves. It has a very vibrant green colour (often brighter and deeper than other matcha grades) due to the leaves’ high chlorophyll content. These leaves are hand-picked, steamed, dried, and stone-ground into a fine powder.

It typically has a sweet, fresh flavour with earthy, umami hints and a smooth texture. Daily grade matcha, also known as premium or traditional grade, is considered to be slightly less sweet, yet not as bitter as culinary grade matcha.

Many prefer to enjoy ceremonial grade matcha in its purest form – i.e. whisked into hot water without any extra additions or sweeteners. However, due to its high quality and delicate depth of flavour, some coffee shops and cafes will also choose to use ceremonial grade matcha in matcha lattes and other green tea drinks on their menu.

You can often identify ceremonial grade matcha by noting the following four characteristics:

  • Vibrant Green Color: Due to the high chlorophyll content from shade-growing, the powder is a bright, vibrant green.
  • Smooth Texture: The powder is finely ground, resulting in a very smooth texture.
  • Sweet, Umami Flavor: The taste is delicate, with a natural sweetness and umami flavor, without the bitterness often found in lower grades.
  • High Antioxidant Content: Rich in antioxidants, especially catechins, which have various health benefits.

What makes it ceremonial grade?

Several key factors distinguish Ceremonial Grade Matcha. For example, it is made from the youngest, most tender tea leaves, typically harvested during the season’s first flush. These leaves are rich in nutrients and flavor, making them ideal for premium matcha. Another critical factor is the production process. After harvesting the leaves, they are steamed, dried, and ground, ensuring a fine, smooth texture. When whisked, it produces a vibrant, dark green, indicating its richness in chlorophyll and nutrients. You will also notice its rich flavor and creamy texture when drinking.

The Different Grades Of Matcha Powder

There are three main grades of matcha – ceremonial, daily, and culinary. Matcha green tea powder is placed into one of these three categories based on where the green tea plants are grown, how they are cultivated, the tea leaves’s harvest period (or season), and the manufacturing process.

These factors, in turn, impact color, texture, nutritional composition, taste, ultimate use, and the overall quality of green tea powder produced.

The three primary grades of matcha can also be further separated into more specific categories such as organic ceremonial matcha, premium daily sipping matcha, cafe barista matcha, chef’s choice matcha, and food ingredient grade matcha.

Matcha grades, like A and AA, indicate the quality and intended use of the tea powder. Grade AA matcha is a high-quality, mid-range option, typically a blend of first and second harvest leaves, suitable for both drinking on its own and using in lattes, smoothies, or baking. It offers a robust flavor that stands up well to other ingredients in recipes.

Here’s a more detailed breakdown:

  • Ceremonial Grade Matcha(AAAA or higher grades):

Hand-picked and made from the youngest first-harvest green tea leaves, ceremonial grade matcha is considered the highest quality matcha available. It is the grade of matcha chosen for traditional Japanese tea ceremonies.

Delicately stone-ground into a fine powder, ceremonial matcha has a vibrant green color, fresh, sweet, earthy smell, silky smooth texture, and a complex vegetal sweet and umami flavor that leaves a creamy, delicate aftertaste on the tongue.

It also has a noticeably deeper shade of green compared to the other two grades of matcha due to its exceptionally high chlorophyll content.

  • Daily Grade Matcha(Grade AAA):

Also known as premium and traditional grade matcha, daily matcha is not too sweet or bitter — falling right between ceremonial and culinary matcha as the second highest quality grade of green tea powder.

Often from a combination of the first and second harvest or just the second harvest of young green tea leaves, daily matcha has a slightly bolder taste than ceremonial grades of matcha. This makes the daily matcha grade a favorite choice for matcha lattes, cocktails, and other beverage recipes.

  • Culinary Grade Matcha(Grade A and AA):

Also often known as cooking grade matcha, kitchen, or chef’s choice matcha, culinary grade matcha is intended to be used as an ingredient in cooking, beverages, baking, and supplements. It often has a savory edge and robust flavor profile.

Culinary matcha often comes from older green tea leaves than those chosen for ceremonial or daily matcha – often from the second, third or even fourth harvest. The higher amount of catechins in culinary matcha impacts its flavor profile, giving it a more astringent, bold flavor with a bitter aftertaste and less sugary-sweet essence that shines through beautifully in baking and cooking.

What is the Difference Between Ceremonial & Culinary Matcha?

While ceremonial and daily grade matcha are relatively similar in terms of usage, the differences between ceremonial and culinary matcha are more distinct.

Use
Ceremonial grade is primarily used for drinking, often just with water. As the name suggests, culinary grade matcha is more suitable for use in baking and cooking.

Flavour
Ceremonial matcha has a nicely balanced flavour with richly complex notes of sweetness, earthiness, umami and a distinctive green freshness. Culinary matcha usually has a bolder, more bitter flavour that can stand out against other ingredients.

Colour
Ceremonial matcha has a very rich, vibrant green colour, while culinary grade is usually a slightly duller, less powerful green. These differences in colour are evident in powder form and the final drink or product.

Texture
Ceremonial matcha tends to have a very fine texture, which produces smooth, silky drinks. Culinary matcha often has a coarser, grittier texture.

Production
Ceremonial matcha is made from young, first-harvest leaves that have been shade-grown for longer periods, providing that deep green colour and delicate, fresh taste. Culinary matcha is made from leaves harvested later in the season, so they have been exposed to more sunlight, which provides that more robust, bitter flavour.
